These are legit waffles, all natural, very clean, gluten-free, nutritious and more importantly, tasty! No protein powders used, just real food ingredients.

It’s Saturday morning and I had an ugly week feeling down due to an injury, so decided to make something that could cheer me up. These beautiful protein waffles!

I served mine with coconut mango ice-cream, but you can try maple syrup and raisins, dark chocolate buttons and strawberries or almond butter and dry goji berries to keep it sugar free. Get creative!

Tip: if put the chocolate buttonsย on top of the waffles as you as you get them out of the iron and they will melt!

protein_wafflesThis recipe is really easy and calls mostly for kitchen staple ingredients. If you don’t have coconut or tapioca flour I really recommend you get some. The packages last quite long (I don’t bake or make these kind of treats often) and they are some of the most commonย flours to use in gluten-free and grain-free baking. So I always have them on hand. I think Iยดll do a list of ingredients to have in the cupboard soon for the blog, so keep an eye on that especially if you live in the UK, as I will link to my favourite ones so you know what to buy.

Sugar-free protein cinnamon waffles recipe

Cooking time: 6 min ย  | ย  Preparation time: 5 min ย  | ย  Servings: 2

Ingredients:

  • 1 cup –ย dairy free milk (I used almond milk)
  • 1 tsp – apple cider vinegar
  • 1 – egg
  • 3 – egg whites
  • 1/2 cup – coconut flour
  • 1/2 cup – tapioca flour
  • 1/2 tsp – baking soda
  • 1/2 tsp – bicarbonate
  • 1/2 tsp – cinnamon
  • 1/4 tsp – salt
  • 1/2 tsp – lemon zest, grated
  • 2 tbsp – butter or coconut oil, melted
  • Extra butter or oil for greasing

Instructions:

  1. Combine milk and vinegar together to make sour milk.
  2. In a separate bowl whisk the egg and egg whites.
  3. Stir soured milk in the eggs and all of the dry ingredients. Mix well avoiding any lumps.
  4. Finally add the melted butter or oil and mix again. Youยดll get a thick but runny mixture.
  5. Grease and warm up your waffle iron. When ready pour the batter allowing it to run around and cover all the iron. Close and wait until brown and crispy. Every iron is different, mine took about 3 min per double waffle (pictured).
